Recipe Ingredients for Rainbow Veggie chili

2 tbsp Extra Virgin Olive Oil
1 medium Squash, Summer, Zucchini, Includes Skin
3 cup, cubes Squash, Winter, Spaghetti
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
4 clove Garlic
0.75 large Onions
28 oz Crushed Tomatoes
15 oz Tomato Sauce
15 oz Black Beans Drained and Rinsed
15 oz Corn, Sweet, Yellow
7 oz Diced Green Chilies
1 tbsp Chili Powder
0.5 tsp Oregano
0.5 tsp Spices Ground Black Pepper

Recipe Directions for Rainbow Veggie chili

  1. heat oil in a large pot over medium-high heat. Stir in zucchini, spaghetti squash, red bell pepper, green bell pepper, garlic and onion. Cook 5 minutes, just until tender.

  2. Mix tomatoes with liquid, tomato sauce, black beans, corn, and green chilis into pot. Season with chili powder, oregano, and black pepper. Bring to a boil. Reduce heat to low and simmer 1 hour, stirring occasionally.
