Sunny and bright, this dish can either use the summer sqash called for above, or 1/2 a whole spagetti squash as its core component. To prep spagetti squash, puncture it with a skewer, then roast at 350 for about half an hour, on a cookie sheet. When cool enough to handle, cut in half, and using a fork, scrape the inside. The "meat" of this squash will come away like strands of spagetti! Cover and refridgerate remaining half.

2 tomatoes
1 large zucchini
1 large yellow squash
1 red onion
1 tbs bread crumbs
2 tbs parmesan cheese
