A colorful soup to serve over rice

Recipe Ingredients for Rainbow Peppers and Beans

1 red pepper, diced
1 green pepper, diced
1 yellow pepper, diced
2 onions, diced
2 tbs. olive oil
6 cups beef stock
4 cups canned black beans, rinsed
2 cups canned navy beans, rinsed
2 cups canned kidney beans, rinsed
1 cup diced canned tomatoes
1 hot pepper
1/2 pound hot Italian sausage
1/2 cup mushrooms, sliced
2 cups baby spinach

Recipe Directions for Rainbow Peppers and Beans

  1. Dice peppers and onions and then in food processor, pulse until pepper mixture is finely minced. In a frying pan heat oil until shimmering and then saute minced peppers 5 minutes.

  2. Rinse and drain canned beans and add to beef stock and tomatoes in slow cooker with an uncut hot pepper (remove before serving).

  3. Add minced pepper mixture to slow cooker and simmer 4 hours.

  4. Cook sausage and slice into soup. In sausage pan cook mushrooms. Add to soup with spinach. When spinach has wilted serve over rice with fried plantain
