Recipe Ingredients for Rainbow Lentil Soup

1 large vidalia onion
4 cloves garlic
1 tbs fresh ginger
2 tbs olive oil
1 tsp cumin
1 tsp chili powder
1 tsp dried chili
1 tsp oregano
1/2 tsp allspice
1/2 tsp cinnamon
1/2 tsp sea salt
1 tsp red pepper
1 large sweet potato
1 cup dry lentils
4 stalks celery
1 small tomato

Recipe Directions for Rainbow Lentil Soup

  1. Saute onions until tender in olive oil.

  2. Add Seasoning/Spices.

  3. Add 6 cups of water.

  4. Add Remaining Ingredients.

  5. Bring to a rolling boil and cover.

  6. Lower heat to medium after 10 minutes.

  7. Cover.

  8. After 45 minutes of cooking, lower heat to simmer.

  9. Let simmer for 1 hour.

  10. Let cool and serve, or let cool and refridgerate it for eating tomorrow for an even greater flavorful taste.
