Recipe Ingredients for rainbow cookies

1/2 lb almond paste
12 oz butter
1 cup sugar
4 eggs
1 tsp almond extract
1 tsp salt
2 cups flour
1/2 cup raspberry jam
1/2 cup apricot preserves
12 oz dark chocolate

Recipe Directions for rainbow cookies

  1. Mix the almond paste, sugar, egg yolks, almond extract, salt, and half of the butter.

  2. Beat egg whites separately until stiff peaks form. Then fold into the other mixture.

  3. Blend in flour 1/4 cup at a time.

  4. Separate dough into three equal portions. Use food coloring to dye them (usually one white, one red, and one green) and pour each into an 8 by 12 inch aluminum pan greased and lined with wax paper.

  5. Bake at 325 for 8-10 minutes. You don't want the edges to start to brown yet.

  6. When cool, begin to stack them layering one jam in between each sheet.

  7. Melt together chocolate (easiest if choco chips) with the other half of your butter. Pour over the dough stack.

  8. Refrigerate or freeze to solidify. Best eaten while still cold or even frozen.
