Another summer soup starter to feed my D&D group in a healthy way. One bowl is all you need to feel full!

Recipe Ingredients for Rainbow Chicken Soup

6 breast, bone and skin removed Chicken, Breast, Meat Only
30 medium (4-1/8" long) Onions, Spring Or Scallions
15 carrot (7-1/2") Carrots
2 medium (2-1/2" dia) Onions
3 cup Coriander Leaves
3 cup, cubes Yam
30 large (1" to 1-1/4" dia) Radishes
8 cup, shredded Cabbage, Red
35 tsp Chicken Flavor Base
20 cup (8 fl oz) Water

Recipe Directions for Rainbow Chicken Soup

  1. Chop up root veggies- yams, carrots, onions and radish into one bowl. Chop other veggies- scallions, coriander leaves, and cabbage into another.

  2. Cube chicken into bite size pieces.

  3. Place a small amount of water into the bottom of a very large soup pot, and cook chicken. Remove meat from water when cooked.

  4. Add chicken base, additional water, and root vegetable bowl to pot. Season as desired. Cook until soft. Turn off heat.

  5. Stir chicken back into soup. Add non-root vegetable bowl. cover- do not turn heat back on. Let stand for 10 minutes.
