Tomato sauce with slow braised beef. Great on pappardelle pasta

Recipe Ingredients for Ragu, Shredded beef

1/2 onion
4 cloves garlic
56 oz diced tomatoes
3 oz tomato paste
1 lb beef chuck

Recipe Directions for Ragu, Shredded beef

  1. Beef needs to be cooked ahead. Requires approx. 3 hours. Great use for leftover pot roast or roast beef.

  2. Chop onion and saute with minced garlic. Add tomatos and paste and simmer for 30 minutes. Add herbs (oregano, thyme, rosemary) to taste, along with salt & pepper.

  3. Shred beef and add to sauce.

  4. Cook pasta. Near the end of cooking pasta, add 1/2 cup of pasta cooking water to sauce. Drain pasta and add to sauce. Coat thoroughly with sauce, turn out onto a serving platter and serve with grated parmesan or pecorino romano.
