Potage using greens. Radish,turnip or other greens can be used or combined.

Recipe Ingredients for Radish Greens Potage

1 tbs butter
1 tbs olive oil
2 potatoes, medium sized
1 onion
1 quart of water or chicken broth
2 quarts greens
1 tbs lemon peel
2 tbs lemon juice
1 salt
1 pepper

Recipe Directions for Radish Greens Potage

  1. Rinse and clean greens. Coarsley chop the potatoes and the onion. rRemove and save the zest of the lemon and juice it.

  2. In a large pot heat oil and butter. Add onion and potatoes, cook for about 5 minutes. Add the water or broth, the radish tops and 1teaspoon of salt. Simmer until the potatoes are soft and greens are wilted. About 10 minutes

  3. Stir in lemon juice and zest. Puree. Taste for seasoning and adjust. Serve hot or cold.
