1 eggplant
1 zuchini
1 red pepper
2 tsp salt
1 c water
1 onion

Recipe Directions for Rachel's Vegetable Soup

Add chopped vegetables to a pot and soften. Add tomatoes and water and bring to a simmer for 20 minutes. Turn down heat and add assorted herbs.
