A light, tasty banana coffee cake.

Recipe Ingredients for Rachel's Banana Coffee Cake with strusell topping

2 tbls flour
2 tbls brown sugar, packed
1 tsp cinnamon
1 tbls margarine
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup unsweetened applesauce
2/3 cup sugar
2 eggs
1 tsp vanilla
1 cup ripe bananas, mashed
1/3 cup 2% milk

Recipe Directions for Rachel's Banana Coffee Cake with strusell topping

  1. Preheat oven to 350 C.

  2. Spray 9x9 pan with light cooking spray.

  3. Mix first 4 ingredients in a small bowl using a fork until crumbly, and place aside.

  4. Combine flour, baking soda, baking powder, nutment and salt in a bowl and stir, setting aside for now.

  5. Mix applesauce, sugar, and vanilla.

  6. Beat eggs one at a time into the wet mixture.

  7. Beat in mashed bananas until well mixed.

  8. Add dry ingredients a bit at a time and alternate with the milk. Mix well.

  9. Pour batter into the prepared 9x9 pan.

  10. Sprinkle topping onto the batter.

  11. Bake in the oven for 40 - 50 minutes or until a toothpick inserted into the middle comes out clean.
