Recipe Ingredients for Rachel Ray's Summer Shrimp Rolls

1 tsp olive oil
1 lb large shrimp
1/4 cp fresh corn kernels
1/4 cp mayonnaise
1/4 cp pesto
2 tbsp fresh lemon juice
1/2 red bell pepper
3 scallions
1 salt
1 pepper

Recipe Directions for Rachel Ray's Summer Shrimp Rolls

  1. Peel, devein and chop shrimp. In a medium skillet, heat the olive oil over medium-high heat. Add the shrimp and cook, stirring, until opaque, about 3 minutes. Remove from heat, stir in the corn, and let cool.

  2. In a medium bowl, stir together the mayo, pesto and lemon juice. Add the shrimp-corn mixture, red bell pepper (cut into 1/2 inch cubes), and scallions (thinly sliced). Toss.

  3. Season with salt and pepper. Serve in hot dog buns.
