I LOVE this dinner. I have modified it slightly, but mostly it remains the same as her recipe. Can't go wrong with Rachel Ray.

Recipe Ingredients for Rachel Ray's Plain Jane Chicken and Potatoes (modified)

10 garlic cloves
1 tbsp Extra-virgin olive oil (EVOO), for drizzling
1 pound of chicken
4 tablespoons italian seasoning, divided
10 small Red potatoes
4 cups broccoli, cut into spears
3 tablespoons smart balance
3 tablespoons flour
3 cups chicken stock

Recipe Directions for Rachel Ray's Plain Jane Chicken and Potatoes (modified)

  1. Preheat the oven to 425F.

  2. Put the cloves into a tiny baking dish. Drizzle the top of the garlic with EVOO, wrap it tightly in tin foil. Place the garlic head in the oven and let it roast for approximately 30 minutes. When the garlic is finished and cool enough to handle, mash the cloves in a small bowl.

  3. Arrange the chicken pieces in a roasting pan, drizzle them with EVOO and season them with italian seasoning. Roast the pieces in the oven alongside the garlic, until they reach an internal temperature of 165F, about 35 minutes.

  4. Toss the potatoes with EVOO and italian seasoning, making sure that they are evenly coated. Put the vegetables on separate baking sheets and roast them in the oven, along with the garlic and chicken, until they are tender and crispy, Potatoes take about 20-25 minutes. Brocolli takes only about 10 minutes.

  5. Once the garlic, chicken, and vegetables are in the oven, melt the butter in a medium skillet over medium heat. Sprinkle the flour into the butter and stir the mixture, allowing the flour to cook slightly, about 1 minute. Whisk in the chicken stock, allowing it to simmer and thicken, about 3-5 minutes. Add the roasted garlic mash to the gravy, stirring to incorporate and season with salt and pepper to taste.

  6. Serve some of the broccoli, potatoes and chicken with a good helping of the roasted garlic gravy over everything. Enjoy!

  7. * Instead of drizzling with EVOO I use a pampered chef oil spritzer. It uses less oil and saves calories.
