Recipe Ingredients for Rachel Ray's Cuban-Style Rice

3 c chicken stock
1 1/2 c rice
1 tsp cumin
1 tsp paprika
1 c pineapple, chopped
2 scallions, chopped

Recipe Directions for Rachel Ray's Cuban-Style Rice

  1. Boil the stock.

  2. Add the rice, cumin, and paprika, and simmer about 18 minutes.

  3. Let stand about 10 minutes, fluff with a fork, and add pineapple and scallion.
