Recipe Ingredients for Rachel Ray's Black Bean Sloppy Joe

1 teaspoon vegetable oil
1 red, green or yellow bell pepper, seeded and chopped
1 jalapeno pepper
1 red onion, chopped
2 cloves garlic
3 cups black beans
1 teaspoon ground cumin
1 teaspoon ground coriander
15 ounce crushed tomatoes
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce

Recipe Directions for Rachel Ray's Black Bean Sloppy Joe

  1. In a large skillet, heat the oil, one turn of the pan, over medium-high heat. Add the bell pepper, jalapeņos, red onion and garlic and cook, stirring, until tender, 6-8 minutes. Stir in the black beans, cumin and coriander; season with salt and pepper.

  2. In a small bowl, combine the tomatoes, brown sugar and Worcestershire sauce. Add to the black beans and simmer for a few minutes. Stir in the lime juice. Serve the Sloppy Veg-Head Joe on the rolls. Top with the pickles and cilantro.
