Light version w/ beans & escarole

Recipe Ingredients for Rachee Veal Scallopine

10 1/2 ounce veal cutlets
3 tablespoons breadcrumbs, italian
1/2 cup white beans
1 tbsp Olive oil
1 tsp garlic, minced
5 scallion, chopped
2 1/2 cups escarole, chopped
1/3 tsp salt
1/4 tsp pepper

Recipe Directions for Rachee Veal Scallopine

Press veal cutlets into breading. In 1 Tbs olive oil, brown both sides ( 1- 1/2 min ea side). Reserve. Bring heat up on high. Add escarole, garlic & scallions. Add water and wilt. Add beans. Cook on high with lid for 3-4 min. Add veqal and toss to finish cooking.
