Recipe Ingredients for Rachael's Carbonara

528 g pasta
5 garlic cloves, chopped
1/2 cup white wine
2 eggs, yokes
1/2 cup parmesan cheese, shredded
1/4 cup basil, chopped

Recipe Directions for Rachael's Carbonara

  1. cook pasta

  2. heat olive oil in skillet

  3. Brown pancetta

  4. Add red pepper flakes and garlic

  5. Cook 2 minutes

  6. Add wine and stir up pan drippings

  7. Beat egg yolks

  8. Add 1 large ladleful of pasta cooking water to egg yolks

  9. Drain pasta and add to skillet

  10. Pour egg mixture on top

  11. Toss rapidly to coat pasta without cooking egg

  12. Remove pan from heat and add a handful of cheese, salt and lots of pepper

  13. Toss until it soaks up agg mixture.

  14. Top with basil and the rest of the cheese.

  15. 8 small servings
