Recipe Ingredients for Racehl Ray's Apricot Poppy chicken with Dill Potatoes

2 pounds small potatoes, halved
1/4 tsp salt
2 tblsp olive oil
1 1/2 pounds chicken breasts cut into large chunks
1/4 cup apricot preserves
1/4 cup shallots, thinly sliced (2)
1/4 cup apple cider vinegar
1 cup chicken broth
3 tblsp honey
2 tsp poppy seeds
3 tblsp butter

Recipe Directions for Racehl Ray's Apricot Poppy chicken with Dill Potatoes

  1. boil potatoes in salted water (10-12 min)

  2. heat EVOO and cook chicken until browned (2 min)

  3. add the vinegar and cook until slightly reduced

  4. Add the chicken broth, apricot preserves, honey and poppy seeds and simmer over medium low hear. Stir in 1 TBSP butter.

  5. Drain the potatoes, stir in remaining butter and dill and salt and pepper to taste.
