Slow-cooked rabbit stew with root vegetables

Recipe Ingredients for Rabbit Stew

2 pounds rabbit
1 pound carrots
1/2 pound rutabaga
1 onion
2 chicken stock cubes
1/4 pound leeks
2 tbsp celery

Recipe Directions for Rabbit Stew

  1. Lightly brown rabbit pieces

  2. Chop all vegetables

  3. Put all togehter in Dutch oven or heavy pan with tight-fitting lid. Add enough water to barely cover, and 2 stock cubes, salt and pepper to taste.

  4. Cook on a low heat for a couple of hours until meat is very tender. Serve with boiled potatoes and/or a green salad.
