Yummy, filling, high-fibre low fat stew, good for autumn/winter time. I throw in herbs as I go along and sometimes a tin of tomatoes.

Recipe Ingredients for Quorn and Veg stew Kayleigh Style

525 grams of parsnips
400 grams of carrots
80 grams of pearl barley
150 grams of quorn pieces
75 grams of broccoli
1 red onion

Recipe Directions for Quorn and Veg stew Kayleigh Style

  1. Cook the pearl barley as per packet instructions,drain and rinse, then put aside.

  2. Cut the onion, carrot and parsnip into chunks roughly larger than the quorn.

  3. Heat up a pan with 2-3 squirts of 1 cal spray oil, then sweat the chopped veg.

  4. Add the quorn, then a pint of veggie stock and and herbs or spices you wish to use.

  5. Bring to the boil and then simmer for 20 mins, or until all the veg is tender. In the last 3 mins, add then broccoli, cut into similar sized pieces.

  6. Stir in your barley and serve
