Recipe Ingredients for Quorn and sweet potato loaf

125 grams quorn mince , 4.5 oz
70 grams bulgur wheat, 2.5 oz
2 tbsp olive oil
100 grams carrots, grated 3.5 oz
1 small onion, grated
100 grams sweet potato, grated 3.5oz
2 garlic cloves, finely chopped
70 grams oats, 2.5 oz
1 teaspoon marmite
2 2/5 fl oz water
2 1/2 grams Bouillon
1 medium egg, beaten
1 1/2 tsp Thyme, Fresh
1/2 teaspoon pepper
1 gram Rosemary, Fresh

Recipe Directions for Quorn and sweet potato loaf

  1. Pre heat oven to gas mark 6

  2. Cook the bulgar wheat according to the instructions.

  3. Heat the oil in a frying pan and fry the grated vegetables and garlic for 3 minutes.

  4. Put the quorn mince into a large bowl. Add the fried vegetables, cooked bulgar wheat, oats, yeast extract, vegetable stock, egg, thyme and pepper. Mix together well.

  5. Line a 2lb loaf tin with greaseproof paper, place the sprig of rosemary in the bottom of the tin and spoon the quorn mixture over the top, pressing the ingredients down firmly, cover with foil. Bake in a hot oven for 40 minutes.

  6. Rest the quorn roast for 5 minutes before turning out and slicing.
