1 medium onion, finely chopped
1 tablespoon balsamic vinegar
2 carrots, sliced
2 stalks celery
1 red pepper, sliced
1 oz sun dried tomatoes
6 ounces mushroom, chopped
1/4 ounce bay leaf
1 teaspoon dried mixed herbs
1/2 pint boiling water
