Adapted from the book, "Raising the Salad Bar". The avocado was one of my tweaks, feel free to leave it out if you aren't a fan.

Recipe Ingredients for Quinoa & Watercress Salad

1 cup quinoa
2 cups watercress
1 cucumber, seeded
1 large carrot
5 radishes
1 red bell pepper
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 cup green onions
1 avocado
1 tbs lemon zest

Recipe Directions for Quinoa & Watercress Salad

  1. Rinse the quinoa well before cooking. Follow package directions to cook the quinoa. I use half water, half chicken stock. When finished, cool quinoa completely.

  2. Chop veggies into an even dice, or whatever your preference is.

  3. Whisk together the lemon juice and olive oil to emulsify. Add a bit of salt and pepper to taste.

  4. Combine all ingredients carefully. Allow to sit for 20 - 30 minutes for the flavors to meld. Stir gently once more and enjoy! This keeps well in the fridge for a day or two, after that the watercress becomes limp and soggy.
