Recipe Ingredients for Quinoa w/ veggies

1 cup quinoa
1/2 cup onion
3 garlic cloves
2 tablespoons extra virgin olive oil
2 cups chicken broth
1/4 cup cilantro
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon black pepper
1/8 cup orange bell pepper
1 cup mushrooms

Recipe Directions for Quinoa w/ veggies

Saute the garlic, onion, peppers, and mushrooms in olive oil. Add 2 cups broth of choice or water, cover and bring to boil. Add quinoa. Cover and return to boil. Reduce heat to a simmer and cook for 15 minutes or until liquid is absorbed. Remove from heat, fluff with fork and add parlsley or cilantro.
