Recipe Ingredients for Quinoa veggie salad

3/4 cup Quinoa Organic
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 cup, chopped Onions
1/2 cup Peas, Green
1/2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
3 tbsp Vinegar Balsamic
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Quinoa veggie salad

Cook quinoa and set aside to cool. Mix zucchini, tomatoes, onion, peas and peppers in large bowl. Whisk vinegar, olive oil, garlic, salt and pepper in a small bowl. Throw over vegetables and mix all ingredients. Add the quinoa, mix, and serve immediately.
