I had leftover vegetables and came up with this recipe.

Recipe Ingredients for Quinoa with Vegetables

2 cups cooked quinoa
1 white onion, diced
1 yellow onion, diced
4 cloves garlic, minced
6 ounces raw spinach
3 carrots, raw and diced
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper

Recipe Directions for Quinoa with Vegetables

Heat olive oil and saute onions, carrots, and garlic until cooked. Add spinach and the cooked quinoa with butter and spices. Mix well until spinach wilts. Can add 1/4 cup parmesan cheese if so desire.
