Quinoa with roasted and fresh vegetables

Recipe Ingredients for Quinoa and Vegetables

1/2 cup, cubes Avocados
1 cup Quinoa
1 cup tomato
1 cup cucumber
1/4 cup cilantro
1 cup squash
4 tablespoons Olive Oil
1 tablespoon Lemon Juice
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1/2 cup green beans

Recipe Directions for Quinoa and Vegetables

Cook quinoa as directed. Add roasted vegetables and freshs, with olive oil, lemon juice, salt and pepper to taste.
