This would be good with almost any vegetable; adding some hot peppers would be good.

Recipe Ingredients for Quinoa & vegetables

1 cup quinoa
2 cups water
5 mushrooms
1/2 red pepper
1/2 onion
1/4 cup parsley
1 clove garlic
2 T olive oil
1/2 tsp sea salt
1/4 cup broccoli

Recipe Directions for Quinoa & vegetables

  1. Prepare quinoa according to the package directions.

  2. Pour olive oil into large skillet.

  3. Chop all vegetables and saute into the skillet. Cook until just barely softened. Add cooked quinoa to the skillet and stir all vegetables and quinoa together.
