flavorful and filling vegan paella, great fall eating

Recipe Ingredients for Quinoa Vegetable Paella

1 onion
2 cloves garlic
1 1/2 c. quinoa
2 tsp paprika
1/2 tsp cumin
14 ounce diced tomatoes
1 red bell pepper
14 ounce red kidney beans, rinsed
3 c. vegetable broth
2 medium zucchini
1 c frozen peas
14 ounce artichoke hearts, rinsed

Recipe Directions for Quinoa Vegetable Paella

Put quinoa in large bown, cover with water, stir well to wash grain. Pour off water, repeat. Saute onion and garlic in deep nonstick skillet with a little water until soft. add quinoa and cook, stirring for another 2 minutes. Add paprika, cumin, cayenne, tomatoes, peppers, beans and 2 3/4 c. broth. Bring to a boil, reduce heat and summer for 15 minutes. Check broth after 15 minutes, if it looks dry, add remaining broth. Place zucchini on top of quinoa and cover. Cook for 5 minutes. Stir in peas, cook uncovered until peas are warm and all liquid is absorbed, about 5 minutes. Arrange artichoke hearts on top and serve.
