Vegan main dish. Can also be made with beans added if you want more protein.

Recipe Ingredients for Quinoa Vegetable Paella

2 tbsp. olive oil
1 onion, chopped
3 cloves garlic, minced
1 1/2 cups quinoa
1/4 tsp. saffron, crushed
2 tsp. paprika
1/2 tsp. cumin
1/4 tsp. cayenne
14 oz. diced tomatoes
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
3 cups vegetable broth
3 medium zucchinis, halved lengthwise and sliced
1 cup frozen peas, thawed
14 oz. artichoke hearts, quartered

Recipe Directions for Quinoa Vegetable Paella

Saute onions and garlic in olive oil until soft. Add quinoa and saffron, saute for 2 minutes, then add remaining spices, tomatoes, peppers and vegetable broth. Bring to a boil and then reduce heat and cover with lid for 15 minutes. Add zucchini and replace lid and cook for another 5 minutes or until quinoa is fully cooked. Add artichoke hearts and peas and cover until just warmed through. Season with salt and pepper if needed.
