Recipe Ingredients for quinoa and turkey

1 1/2 cups quinoa
1 cup turkey
1 tbsp olive oil
1/3 cup onion
1 tsp garlic
1 3/4 cup low sodium chicken broth
1/2 tsp kosher salt
1/4 cup orange juice
1/4 cup dried cranberries
1/3 cup pecan nuts
1/4 cup chopped parsley

Recipe Directions for quinoa and turkey

  1. bring chickenbroth to a boil, add quinoa

  2. and orange juice, and let simmer until

  3. all liquid is absorbed.

  4. heat olive oil and cook onions and garlic

  5. until softened. add ground turkey (or

  6. cubed turkeybreast) and cook through.

  7. take off heat.

  8. in the meantime, soak cranberries in

  9. hot water until softened, then drain, squeeze excess liquid, and chop into small pieces.

  10. chop pecans and roast in non-stick pan

  11. until fragrant.

  12. chop parsley and mix everything together.

  13. enjoy by itself or with a side salad.
