This salad is easy to make and packs a generous serving of protein and fibre.

Recipe Ingredients for Quinoa Tossed Salad

1 cup quinoa
2 cups water
1 cup edamame
1/2 cup celery, diced
1/2 cup red bell pepper, diced
1/2 cup green onion, chopped
1 cup dried cranberries
3 tbsp white wine vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1/4 tsp salt

Recipe Directions for Quinoa Tossed Salad

  1. Cook quinoa as per package instructions and allow to cool.

  2. Cook edamame as per package instruction and allow to cool.

  3. Blend together quinoa, edamame, celery, red pepper, onion and cranberries.

  4. For the dressing, stir together wine vinegar, olive oil, mustard and salt. Pour over salad mixture and blend together.

  5. Allow to cool in refridgerator for 2 hours or overnight to meld flavours together.
