Recipe Ingredients for Quinoa Tomato Salad

1 cup quinoa
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons feta
4 tablespoons cilantro
5 kalamata olives
1 tomato

Recipe Directions for Quinoa Tomato Salad

  1. Add one cup quinoa with one cup of water in saucepan and bring to a boil. Once boiled, cover and lower to a simmer until water is absorbed and quinoa is light and fluffy (approx. 20 minutes)

  2. Put quinoa in a large mixing bowl and add chopped tomato, chopped olives, chopped cilantro, crumbled feta, olive oil and vinegar

  3. Toss well and serve warm or cold
