Recipe Ingredients for Quinoa with Tomato and Chickpeas

1 cup quinoa
1 cup canned chickpeas
1 tomatoe
1 clove garlic
3 tablespoons lime juice
4 teaspoons olive oil
1/2 teaspoon ground cumin
1/4 cup fresh parsley
2 grilled chicken breasts

Recipe Directions for Quinoa with Tomato and Chickpeas

  1. Place quinoa in a fine mesh strainer and rinse under cold running water until the water no longer foams. Bring the quinoa, 2 cups water and salt to a boil in a sausepan. Reduce heat to low, cover, and simmer 20 to 25 minutes.

  2. Stir in chickpeas, chopped tomato, garlic, lime juice, olive oil, fresh parsley, and chopped chicken breast. Serve over mixed baby greens.
