Recipe Ingredients for Quinoa Taco Salad

1 can beans, kidney, rinsed and drained
1/4 cup jicama, chopped
1/4 cup frozen corn kernels
1/4 cup cilantro, chopped
1/4 cup red onion, chopped
1 pepper, jalapeno, chopped
1/4 cup grape tomatoes, halved
1 small avocado, chopped
2 cups arugula or spinach or lettuce
1/2 cup quinoa, cooked
2 tablespoons feta

Recipe Directions for Quinoa Taco Salad

Mix all together and serve over greens with salsa or cilantro lime vinaigrette.
