Healthy version of a favorite summertime salad!

Recipe Ingredients for Quinoa Tabouli

3/4 cups quinoa
1 scallion
1 clove garlic
2 tbs Olive Oil
1/2 cup lemon juice
1 cup parsley
2 tbs Mint
1/2 cup cucumber
1/2 tsp salt

Recipe Directions for Quinoa Tabouli

cook quinoa according to directions. Chop parsley, mint, garlic and cucumber, mix into cooled quinoa. Blend the lemon juice, oil and salt. Pour over salad and mix well. Refrigerate for 1 hr. Enjoy!
