Here is a variation on the traditional Middle Eastern salad. Can add toasted sunflower seeds kalamata olives, piece of baked tofu, or sizzled tempeh

Recipe Ingredients for Quinoa Tabouli

2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 garlic cloves,finely minced
2 cups cooked quinoa
3/4 cups parsley, finely chopped
2 scallions,finely sliced
1 1/2 cup tomatoes, finely chopped
1 salt
1 ground pepper
1 1/2 cups romaine lettuce

Recipe Directions for Quinoa Tabouli

In a medium bowl, mix together all of the ingredients except the lettuce. Salt and pepper to taste. Place ribbons of lettuce on each plate, and top with the salad, then serve.
