Serve over a bed of spinach. Garnish with nasturtiums.

Recipe Ingredients for Quinoa Tabouli

3 cups water
1 1/2 cups quinoa
1 t sea salt
3 cups chopped tomatoes
2 cups cucumber
1 cup chopped parsley
1/2 cup chopped mint
1/2 cup kalamata olives
1/2 cup chopped chives
1/3 cup lemon juice
5 tablespoons olive oil

Recipe Directions for Quinoa Tabouli

  1. Boil water in 2 qt. pot.

  2. Put quinoa in an unoiled skillet over med-low heat. Dry-roast quinoa, stirring constantly, for 3 minutes or until it pops.

  3. Turn off the heat.

  4. Add boiling water. Turn the heat to med-low, cover, and simmer for 15 minutes.

  5. Transfer quinoa to a large bowl and cool.

  6. Add tomatoes, cucumbers, parsley, mint, olives, chives, lemon juice, and oil to the quinoa.

  7. Mix well and enjoy.
