An excellent, portable mini-meal, high in fiber and protein thanks to it's base of quinoa, with all the fresh flavors of tabouleh.

Recipe Ingredients for Quinoa Tabouleh

1/4 cup quinoa
1/4 cup parsley
2 tbsp green onion
2 tbsp mint
2 tbsp diced tomato
1 tbsp lemon juice
1 tsp olive oil
1 pinch salt
1 pinch Spices Ground Black Pepper

Recipe Directions for Quinoa Tabouleh

  1. Boil 3/4 cups water with a pinch of salt. Cook quinoa in water. Let cool, then fluff and add pepper.

  2. Chop parsley and mint. Finely slice green onion. Add greens to quinoa and stir with lemon juice and oil.
