Vegetables are cubed, small and mixed with liquids and salt. I substituted a zucchini in place of a cucumber because my wife doesn't like cucumbers.

Recipe Ingredients for Quinoa Tabbouleh

1 cup Quinoa
1 tsp sea salt
1/4 cup olive oil
1/4 cup lemon juice
3 tomatoes
1 zucchini
1 large green onions
2 carrots
1 cup italian parsley

Recipe Directions for Quinoa Tabbouleh

  1. Prepare 1 cup of quinoa as package directs

  2. dice vegetables

  3. mix vegetables with salt, olive oil, lemon juice

  4. add quinoa

  5. serve or chill and serve later
