Modified Tabbouleh with quinoa and cucumber

Recipe Ingredients for Quinoa Tabbouleh

84 grams trader joes quinoa
109 grams Extra Virgin Olive Oil
200 grams Lemon Juice
85 grams Onions, Spring Or Scallions
238 grams Organic Cherry Tomatoes
6 grams Spearmint, Fresh
214 grams Cucumber
400 grams Parsley
6 grams salt

Recipe Directions for Quinoa Tabbouleh

  1. Cook quinoa according to package directions.

  2. Remove all stems from parsley (use curly for better results in processor) and soak in water.

  3. Wash very well and allow to dry or put through a salad spinner.

  4. In batches pulse in a food processor until fairly small.

  5. dice tomatoes, cucumber and scallions (including the green part).

  6. Finely chop mint.

  7. Squeeze all lemons. Combine all ingredients. Toss
