Recipe Ingredients for Quinoa tabbouleh

1 c quinoa
1 T olive oil
2 T lemon juice
8 oz grape tomatoes
2 c cucumber
3 c parsley
1 c mint

Recipe Directions for Quinoa tabbouleh

  1. Cook quinoa according to instructions (boullion or spices can be added to enhance the flavor)

  2. Chop parsley and mint

  3. Cut cucumber and grape tomatoes into bite size pieces

  4. Mix cooked tabbouleh with olive oil, lemon juice and black pepper

  5. Gently stir in vegetables

  6. Let marinate and chill before serving
