i like to serve this salad cold on mixed greens or warm with some collards

Recipe Ingredients for quinoa and sweet potato salad

1 cup quinoa, dry
2 cup vegetable broth, organic
1 large sweet potato, diced
2 tbs. olive oil, divided
1 black pepper, to tast
1 sea salt, to taste
1 cayenne pepper, to taste
2 tsp. lemon juice

Recipe Directions for quinoa and sweet potato salad

  1. preheat oven 350

  2. bring quinoa and veggie broth to a boil over medium heat reduce heat to low and simmer until stock is absorbed transfer to bowl and let cool

  3. coat sweet potatos in 1 tbl of olive oil and season with pepper salt and cayenne. roast until crisp remove from oven and let cool

  4. in a medium sized mixing bowl combine lemon juice and remaining 1tbs oil. season with salt and pepper and mix in quinoa and sweet potatos.
