Quinoa with steamed sweet potato, green onions, and avocado.

Recipe Ingredients for Quinoa with Sweet Potato

1 c. quinoa
15 oz. sweet potato
1/2 c. green onion
1 avocado
1 c. cilantro
1/4 c. olive oil

Recipe Directions for Quinoa with Sweet Potato

  1. Cook quinoa according to directions. (1 c. quinoa in 1 c. water. Bring to boil, then simmer for 6-15 minutes until water is absorbed.)

  2. Peel and dice sweet potato, then steam until tender. Peel and dice avocado. Chop green onion and cilantro.

  3. Mix everything together. Season to taste with salt, pepper, chile powder, red pepper flakes.
