Recipe Ingredients for Quinoa sweet potato pilaf

1 cup quinoa
15 oz low sodium chicken broth
1/2 onion
1 garlic clove
1 medium sweet potato
1 tbsp ghee
3 green onions

Recipe Directions for Quinoa sweet potato pilaf

  1. Boil quinoa in broth 20 minutes

  2. Sauté sweet potato and onion in ghee until browned, about 10 minutes. Add garlic.

  3. Mix quinoa and sweet potatoes, then stir in chopped green onions and serve.
