A very yummy, high in protein substitute for a starch! This is an ancient grain, and a perfect food!

Recipe Ingredients for Quinoa, Sundried Tomatoes and Onion

1 cup Quinoa, rinsed well
1/2 cup Chopped Onion
2 tsp minced garlic
16 g Sundried Tomatoes, chopped
2 cups Chicken Stock
1 tbsp OIl

Recipe Directions for Quinoa, Sundried Tomatoes and Onion

Heat oil over med/high heat. Soften the onions, tomatoes and garlic for 3-5 minutes. Stir in the chicken stock and Quinoa, bring to a boil. Reduce heat to low and simmer for 30 minutes or until Quinoa has absorbed the liquid - usually less than 30 minutes.
