Recipe Ingredients for Quinoa with Summer Squash

0.5 cup Quinoa
0.5 cup, chopped Onions
0.5 cup, chopped Carrots
1 medium Squash, Summer, All Varieties
2 tbsp ICBINB! Light (Soft)

Recipe Directions for Quinoa with Summer Squash

  1. Cook 1/2 cup quinoa in 1 cup water according to package instructions (about 15 minutes).

  2. Meanwhile, heat 1-2 Tbsp margarine in a saucepan. Add 1/2 cup chopped onions. Saute for about 5 minutes.

  3. Add 1/2 cup chopped carrots (small pieces work best) to the pan. Cook covered for 5-10 minutes or until the carrots are tender, stirring occasionally.

  4. Chop 1 medium summer squash (any variety), and add to the pan. Cook covered for an additional 5-10 minutes or until vegetables are tender, stirring occasionally.

  5. Serve the vegetables over the cooked quinoa.

  6. Season with garlic powder, black pepper, and dried parsley.
