A cold salad made from quinoa, peppers, onion, chick peas, oil, and vinegar. This recipe is vegan-friendly (honey can be replaced with other sweetners).

Recipe Ingredients for Quinoa Summer Salad

0.3 cup, chopped Peppers, Sweet, Red
0.3 cup, chopped Peppers, Sweet, Green
60 grams Orange Hothouse Bell Pepper
3 stalk, medium (7-1/2" - 8" long) Celery
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
0.7 cup Quinoa
1 tbsp Olive Oil
0.5 tbsp Corn Oil
1 tbsp Vinegar Balsamic
0.5 tsp Soy Sauce
0.3 tbsp Raw Honey
0.5 dash Salt, Table
0.3 cup chopped Red Onion

Recipe Directions for Quinoa Summer Salad

  1. Prepare 3/4 cup of white quinoa according to the directions on the package. After cooking and draining, rinse with cold water.

  2. Finely chop red, green, and orange pepper (about 1/3 cup of each), as well as 3 stalks of celery.

  3. Put chopped veggies in bowl, and add 1 can drained chick peas.

  4. Pour 1-2 tbsps of oil over the mixture and gently stir.

  5. Add cooled and drained quinoa, stir again.

  6. In a cup, combine balsamic vinegar, honey, soy sauce, and spices (mustard seed, oregeno). Pour over ingredients and gently mix ingredients.

  7. Cover and let sit in refridgerator for 30 minutes before serving.
