Recipe Ingredients for Quinoa Summer Salad

1 cup uncooked quinoa
1 medium red onion
1 medium red pepper
1 medium cucumber
16 oz chickpeas
1/4 cup olive oil
1/4 cup cilantro
1 clove garlic
1 salt
1 pepper

Recipe Directions for Quinoa Summer Salad

  1. Cook Quinoa - let cool

  2. chop vegetables to desired size

  3. drain & rinse beans

  4. toss all ingredeants together

  5. chill and serve
