The Quinoa can be substituted with couscous, buckwheat, bulgar or any other grain you may prefer. (Calories will change). You can also add other fruit or veg like peaches,asparagus, lettuce (finely chopped) , zucchini, onion (spring) and cucumber. This salad is tasty and great for summer lunches.

Recipe Ingredients for Quinoa and summer fruit salad

1/2 cup quinoa
1/2 avocado
1/2 mango
50 g walnut pieces
100 g currants
50 g sunflower seeds
2 tbs lemon juice
2 tbs olive oil
2 ml salt
2 ml pepper

Recipe Directions for Quinoa and summer fruit salad

  1. Cook Quinoa, drain and set aside

  2. chop fruit and veg into small pieces

  3. combine all ingredients in a bowl

  4. toss and serve
