Quinoa Stuffing Recipe

Makes 4 servings



Use this stuffing for poblanos for a more traditional Mexican treat. Mushrooms, squash or eggplant are other possibilities. Add one ounce of shredded cheese to each serving, if desired. I used 6 ounces of soyrizo.

Recipe Ingredients for Quinoa stuffing

1 large sweet potato
1/2 tsp cumin
1/4 tsp cayenne
2 tbsp oil, canola
1 cup quinoa
12 tbsp soyrizo
1 cup onion, diced
2 garlic cloves, minced

Recipe Directions for Quinoa stuffing

  1. Preheat oven to 400 degrees F. Toss sweet potato cubes with cumin, cayenne and 1 tablespoon oil and roast on a baking sheet lined with foil for 15 minutes, until browned on the edges. Set aside. Meanwhile, bring 1 1/4 cups water to a boil and add the quinoa. Reduce heat to low, cover, and cook for 15 minutes until the quinoa is tender, and the water adsorbed. Cover and reserve.

  2. Heat remaining tablespoon of oil in a large skillet over medium-high heat and cook soyrizo and onion until onions are tender, about 8 minutes. Add garlic and cook 1 minute more, until the garlic is fragrant. Stir in the quinoa and sweet potato cubes.

  3. Brush the vegetable to be stuffed with oil (you will need to add 1 serving vegetable and the amount oil used to your food log separately). Use 1/4 of the stuffing for each serving. Top with cheese, if desired (you will need to add this to your food log separately). Arrange the stuffed vegetables on a baking sheet and bake until the vegetable is tender (about 30 minutes for poblanos). Refrigerate any leftovers.
